My goal this year is finding quick recipes that work for the whole family. Toddler and husband approvals are a must!

This one fit into that category. It is made with chicken breast providing a lean protein for my little ones…and big one too! I also loved that they ate zucchini, onions and garlic. I normally have to blend those ingredients into soups.

I paired with basmati rice and my Brazilian black beans for the little ones. I even added in a little fun imported italian pasta drizzled with olive oil and some steamed veggies. Plates were empty!

For the adults, toss it into a pasta with vegetables or tomato sauce for a healthier bolognese. Another idea is to eat with rice, beans and a salad. YUM!

Sauteed Chicken and Zucchini- Kids Plate

Sautéed Chicken and Zucchini
  1. In a large pan, add in the olive oil and garlic. Sauté for a minute or two.
  2. Add in the onions and sauté for 5 minutes or so until they are translucent.
  3. Add in the zucchini and parsley. Sauté for another 10 minutes until all the veggies are slightly golden, soft and will integrate well into the chicken.
  4. Add in the ground chicken. Pour the shoyu sauce on top. Mix frequently so that the chicken turns into small pieces and all the veggies mix in with the chicken.
  5. Serve with rice and beans or on top of pasta! Enjoy!
Recipe Notes

Use organic ingredients, if possible. Any meat of your choice will do, or tofu! The higher the fat content of your meat, the less olive oil you will need to add. By Tracy Posillico
