This was an easy meal that the whole family loved. Quick and very little thought!

Sole Oreganata

Sole Oreganata
  1. Preheat the oven to 375.
  2. Place the sole fillets in a baking dish.
  3. Squeeze the lemon over the fillets.
  4. Pour the olive oil on as well.
  5. Sprinkle the minced garlic throughout.
  6. I let it sit in the fridge marinating for two hours to really let the flavors soak in. However, if you do not have the time, move on to the next step.
  7. Sprinkle most of parsley and oregano on fillets, leaving just a little to put on after bread crumbs.
  8. Cover fillets with bread crumbs.
  9. Sprinkle the remaining herbs on top. I love to do this for color. It adds to the presentation.
  10. Bake in the oven for 20-25 minutes.

We paired the fish with a scoop of sautéed spinach and a handful of ancient grains spaghetti that I briefly sautéed in olive oil and garlic. The spinach was a no-go for the toddlers but they were very happy with the fish and noodles!
